My apologies for the lack of tact in my initial comments. This question came to mind: How can I get over something I truly regret? How can I erase this mistake? I agree with you: it is a matter of subjective opinion and I will have to admit that I was stupid to have reacted that way. Again, really sorry.

Hi Maxime,
Thank you for your opinion. As I'm sure you're very much aware, food and restaurant experiences are extremely subjective and different from everybody and can even vary on two different visits to the same restaurant. The status of a restaurant doesn't bother me into being jealous of their success, nor do I aim to put down a restaurant just for the sake of being able to do so - I'd write bad about every restaurant then! As you mentioned, you clearly thought Noma wasn't a patch on L'Arpege - that's entirely your opinion and I don't doubt that for you. If you've read my article properly, there were some amazing aspects to my dinner as well. I'm sure you understand the nature of food writing and personal experiences, having, as it seems, an experienced palate and a sound experience base of fine dining. Thanks again!
